We love egg muffins as a quick grab-and-go breakfast option! For families, this is a perfect recipe to be able to tweak to each of your family member’s preferences. Before adding the rest of your ingredients, pour the egg mixture into each cup and then add each person’s favorite mix-ins!
Easy Egg Muffins
(Servings: 12 muffins)
½ cup shredded cheese of choice, optional
¼ cup water
1 cup diced meat, optional
1 cup packed spinach, finely chopped
¼ cup green onion
¼ medium onion, diced
Seasonings of choice: chili powder, red pepper flakes
3 tbsp sundried tomato, finely chopped
ground pepper, cumin, paprika, Italian, etc.
1 cup mushroom, finely chopped
Olive or coconut oil spray
Whisk together eggs and water. Add in the rest of the ingredients to whisk once more. Spray a muffin tin with oil and pour egg mixture in each cup ¾ full. Bake at 350° for about 15-20 minutes, or until fluffy and starting to brown. Store in an airtight container in the refrigerator to keep for up to 5 days.
