Fudgy Dark Chocolate Brownies


6 tablespoons white whole wheat flour (or gluten-free* flour, measured like this)

6 tablespoons unsweetened cocoa powder

1/8 teaspoon baking powder

1/8 teaspoon salt

1 tablespoon unsalted butter (or coconut oil, melted and cooled slightly)

1 large egg

1/2 teaspoon vanilla extract

2 tablespoons plain nonfat Greek yogurt

1/4 cup pure maple syrup


1.) Preheat the oven to 300°F, and lightly coat a 6”-square baking pan with nonstick cooking spray.

2.) In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. In a separate bowl, whisk together the butter, egg, and vanilla. Stir in the Greek yogurt, mixing until no large lumps remain. Stir in the maple syrup. Mix in the flour mixture, stirring just until incorporated.

3.) Spread the batter into the prepared pan. Bake at 300°F for 10-14 minutes (10 minutes yields the fudgy brownies; 14 minutes yields slightly firmer brownies). Cool completely to room temperature in the pan, and let the brownies sit for at least 8 hours at room temperature
